
The climate in the Languedoc is perfect for the production
of top quality wine. The winters are cold, summers long and
dry. Rain is normally followed by strong north-west winds
which help dry the canopy and reduce problems of fungal
diseases such as odium and mildiou.
Caux is flanked on one side by the mountains of Haut
Languedoc and on the other side by the Mediterranean and
thus benefits from cool night time breezes which give the
grapes the perfect conditions to ripen and develop full
intense flavours.
